John Matthews

John Matthews is the founder and president of Gray Cat Enterprises Inc., a Raleigh, N.C.-based management consulting company. Gray Cat specializes in strategic project management and consulting for multiunit operations; interim executive management; and strategic planning. Matthews has over 30 years of senior-level executive experience in the retail industry. Prior to founding his own company in 2004, Matthews held senior management positions as president of Jimmy John’s Gourmet Sandwiches and as VP of marketing, merchandising, facilities, corporate communications and real estate at Clark Retail Enterprises Inc.
